Bitter Sweet...

Today is the last day of summer for my boys. We do have meet the teacher tonight. Im sure everyone feels bitter sweet. Summer went by so fast. We did have a blast!! Boys had tons of play dates, saw a bunch of movies, a few sleepovers and a big vacation in Cali. Yeah I would say my boys made some great memories over the summer that will last a lifetime. Im so ready to get them back on track. Bed time by 8, up and ready to out the door by 7:10, pick up by 3, homework, you get the pictures. Im so ready to have a little peace and quite, around here. Im so DONE with their fighting and cleaning one mess after a other!!! Im kinda sick of hearing my own voice telling them "stop it, quit hitting each other, stop touching him, give that back" UGH!!!
They are ready and I am ready!!!!
Here is a quick and simple recipe idea for day. Side ideas salad, rice, and green beans.

Ingredients

Makes: 4 servings
Start to Finish: 20 minutes
  •     11/4    pounds boneless, skinless chicken breast, thin-cut fillets, rinsed and patted dry
  •         Salt and pepper
  •     2     teaspoons Italian seasoning, McCormick®
  •     2     tablespoons extra virgin olive oil
  •     1     stick (1/2 cup) butter
  •     2     teaspoons fresh chopped thyme leaves
  •     2     tablespoons lemon juice, ReaLemon®

Directions

  1. Season both sides of chicken breasts with salt, pepper, and Italian seasoning; set aside. Heat oil in a large skillet over medium-high heat. Add chicken breasts and sauté for 3 to 4 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  2. Melt butter in skillet. When butter starts to foam and turn brown, remove from heat. Carefully stir in thyme and lemon juice as juice will splatter. Return pan to heat. Add chicken and any accumulated juices. Heat chicken through, turning to coat with sauce. Serve immediately, drizzled with a small amount of sauce.
